Depending on the amount of trimming you want to do, you could fit 40's if you wanted. I fit 31's on my XJ stock, and it was a tight fit, and I know ZJ's are even tighter. But with the right amount of trimming, they should fit no problem.
 
Is it possible with some trimming to fit 31 inch tires on 15 inch wheels on a stock ZJ. It is a 1993 jeep grand cherokee?
They will rub some where. You need at least 2" to run 31's with no rubbing and even then you may rub the control arms on full turns.
 
With Up country sort of

My 97 has up country suspension and after a bumper trim it only rubs the control arms at full lock not even when parking, but you end up doing more three point turns off road. Mine doesn't rub in the bumps but I'm looking into getting a 2" lift to clear it properly.
 
Also with up country suspension (because I was wondering this before) I didn't get any rubbing on the bumper while going forward, only in reverse and then it was slight. (Not sure why that is). For those that don't know Up Country suspension is essentially a one inch lift from the factory with higher quality components. Technically stock but it is important to know what you've got.
 
I have 31x10.5x15s on my 95 ZJ Orvis w/ upcountry suspension and stock Orvis wheels...little rub on sway bar at full turn and slight rub on in rear wheel wells at full stuff...nothing I can't live with though....31s on a non upcountry equipment ZJ may be a whole nother story without at least a BB, thinking about doing a BB on mine as it is for a little extra clearance....pic of mine on 31s north of Vegas
