I hope this doesnt open a "what's the best oil for my Jeep" type thread. I belong to 4 different WJ-FB pages. Typically the questions/topics on those are less complex than here. Often the question comes up about where the needle should sit on the Temp Gauge. It seems to be widely accepted that the needle straight up at 210 is normal and common. I do know the thermostat opens at 195 but how does that relate to the temp we see on the gauge since the calibrations are not clearly defined? Mine runs slightly to the left of 210. It does heat up to 210 sometimes depending on driving conditions, even with the fan upgrade. But then goes back down once the EFan kicks in.

My WJ GC 4.7 HO runs right on the money...
I'm in Australia and it gets pretty damn hott here down under..
I personally prefer To run Penrite HPR 5/ 5w-40 in my girl and she stays sweet as all year round..
Even with the chip and mild work I have done to it the HPR 5 keeps her purring like a touched up *****............... cat.
I've also found that if I drop the HPR out of her every year or 2 and run a full synthetic through her for a month sometimes 2 and take her for long drives on the highway it seems to clean all of the dirty un wanted deposits out of the block very nicely..It seems to act like a magnet and rip all of the crap out of her...
By the way... I drive my WJ like it is stolen too and I have never had any temp problems...
GOOD luck with it Mate..🤘

to enter test mode press the ac and recirc buttons in together and at the same time turn the left temp dial clockwise 1 click.
it will then display all the blend door faults numbers like 54,56 etc
if you then turn the left temp dial again it then shows the current system parameter numbers from 1 to 89, 61 is outside temp, 64 is vehicle speed in mph, 65 engine rpm and 66 is coolant temp. when you get to the one you want to see just press the ac or recirc button to see what its value is.

Our WJ runs 206* all day long (real time data on scanner). Will creep up to 208* if sitting in traffic for a long time and it's Texas heat-wave hot outside.
