I picked up a CJ as a project, and while cleaning the engine, I came across a "360" stamped in the center of each side of the block, about an inch tall numbers. Does this mean it's a 360, or is there some other way to tell? I've already learned that they put a motorcraft 2-barrel carb on it. Thanks.

Yeah, I'd assume that it's a 360. The most common v8s found in CJ's are the 304 and 360. The 360 is obviously the bigger/stronger of the 2. Actual HP and torque will depend on production year. It's debatable but most here tend to lean towards the 360. I wish I had one :D .
 
all the AMC V-8 had the size cast into the block
the only V-8 to come in a cj from the factory was the 304 but any AMC V-8 can be droped in with no problem at all
 
To expand on Fuzz's post...

The cubic inch casting number which is cast into the block usually ends up near or under the motor mounts.. A 304 block literally has the number 304 cast into the side of the block, same with 360 and 401....

Well that's good to know.

I've been searching around looking at parts for the engine, and I'm coming across a lot of parts interchangeable between the 304 and 360. I'm finding almost everything is the same from plugs and wires to headers. Are they really the same? What is different?

I will not be taking off any parts that have seals, other than maybe the water pump and remote oil filter. The engine ran before I took it out with no leaks. I'm just trying to get the outside looking new with fresh paint and new parts that are necessary like headers, plugs and wires, air intake, etc.

Your 304 will have 3.75 diameter bores while the 360 will have 4.080 bore. Both have the same stroke, 3.44 inches. I think the exterior of the blocks are the same. Heads probably won't interchange.
 
the head bolt pattern are the same the 360 has bigger valves and with any kind of lift they will just hit the cyl wall on a 304
timing chain - intakes - valve covers - dizzy - timing cover - oil pan - cams - cam bearings - water pump - will inter change between the 304-360-390-401 motors

360-401-late 390 heads are all interchange
