I'm going to add another nail to the coffin.
Just got done doing a 304 overhaul on my buddies 72 ground up.

The quality of the engine rebuild kit was miserable. I'm talking about name brand items.
The edges on the Melling pump were rough and needed to be dressed for it to operate.
Then new bypass plunger was a couple of thousands bigger and kept getting stuck in the bore.
The Cloyes timing chain was sloppy and needed to be replaced.
Intake seals were some kind of hard recycled "rubber" and squirted out every time we tried to tighten it.
The list goes on and on.

My point, (beyond ignorance is bliss) is to insure you have a solid builder who knows what he is doing beyond just assembling parts.

Truth be told, if you don't have a trusted machine shop and are not able to build/assemble yourself you will be money ahead just buying a used running engine. That may suck, but it's the reality of the situation.

Jealous of your situation even though its gonna cost a lot of $$$. I have a perfect running 258 that HAS TO GO this coming winter. Need that V8 AMC sound and have yet to find a 360 locally.
Where you at? I got a spare 360 and a mild built 304 that was built by an old school AMC drag racer out of Oklahoma.

buying too many parts for too many Jeeps

Not yet and I dought I ever will with this CJ. My father bought it new in 1980 and I just recently got it here. Still needs some work. It might see some dual track or Assateague, but I'm not trying to make it a hardcore off-roader.
