Looking to do a slammed postal truck for events and use it for ice cream sales have a rolling shell just looking for engine tranny ideas axels and suspension.

The sky is the limit. It's a 2WD with lots of room under the hood. This allows you the choice of engines and drivetrains.

The rear axle is a D44, which is plenty strong so that can stay, sans a gearing change.

Again, your choice......
You can mod a stock AMC 232 engine.
You can install a V8 AMC.
You can install a SBC.
Perhaps a retro build, with a Ford 390, LBC, Dodge offering or other "hot" engine of the era.
You can install a modern engine, like an LS1, or the "odd" offering, such as a hemi.
Perhaps a V6?
Or a small diesel, like a 4BT.

The stock transmission that came with the chosen engine would be best.

As I said, without narrowing down the options, the only limit is your wallet and expertise.
