I finally got my 2010 JKU home for a much needed clean up. I have the lift, tires & wheels on the way.
At home all cleaned up, then at the dealership (cleaned up pretty good):

You should be fine with a 2" lift. The other thing to consider is the offset of the wheels you are running. If you are running stock wheels you may need to add wheel spacers.

You typically will have around 3 gallons left when it reads empty or the "low fuel" light comes on. From what I've read it's to help keep the fuel pump cool and not burn out.
