I had a similar sound that I could not reproduce...

I had a similar sound that I could not reproduce while up on jack stands. Turned out to be a bad U-joint that only clicked when under a load.

Any properly sized hardware will work, you don't need Mopar hardware to secure the hardtop. And that "hardtop seal kit" is just common weatherstripping you can buy at any hardware store.
