overheating issue on big hills or hot days.

Jeep Information

2002 wj overland 4.7 ho with hydraulic fan setup. Gets hot on big hills (210-220)
and cools down when I summit. and recently got near 240 degress going 70mph on a a big uphill and was only 80 degress out. Water pump, temp sensor, coolant, rad caps, thermo, hoses have all been replaced in the past couple years and problem still persists. I recently tried to bleed any air out and got not bubbles. First couple years I had no issues and drove it in the desert no issue. So what's possibly happening?
