how capable is a gladiator rubicon for off road with no mods?

I live in Southern California.

would a jeep gladiator rubicon be able to handle intermediate type off road trails here? or are there some essential mods i would need to do?

I ask before i am thinking of getting a jeep to haul my dirt bike, so the real gnarly stuff i will be on my dirt bike, but who knows, maybe i get into running my jeep on non crazy trails too.

Stock Jeeps are capable of doing trails far tougher than new offroaders would be comfortable with, especially with f/r lockers like your Rubicon has. Air your tires down, that helps a lot. 12 psi wouldn't be too low, any air pressure 15 or over isn't really airing down.
