TJ half/full door interchange

I'm looking for a used rubicon with half-doors. Alas, very rare. Is it as simple as taking off the full doors and putting on half door bottoms and tops? Or is there more to "converting" than this?

well, you'll need to change the lock cylinders if you want to be able to use the same key as the ignition

Good point, although from what I've read its really simple to switch locks between doors. Also, I think the mirrors are different so make sure the new doors come with mirrors.
