Tire Size increase

I would like to install 31x10.50 tires with canyon rims. If I do will it effect the performance on the engine

It might. It depends on what you have.

What he said, depends. What's your ring and pinion ratio? I wouldn't worry about it too much though. Worst case you have 3.07 gearing with a manual transmission, which isn't too bad. I had 3.07 w/ 31's for a while and it was tolerable. Then someone stole my Jeep, but that's a whole other story. If you have an automatic it will be even less noticeable. Now go change your tires.
