Besides the Cj7 being 10" longer, what are the main differences between a Cj7 and a Cj5?

Doors. the CJ5 has an "S" shaped door where the CJ7 has a "U"
In later years the CJ7 changed to wide track axles, which carried on to the YJ and TJ.

Dawgates pretty much summed it up. Doors and Axles and you already know the stretch issue.

I heard there is a bit of a height diff. as far as the interior goes. I am 6'3 and judging by the pics of the 5's I might have an issue with them

Until the early 70's, tailgates were standard on the CJ5. After that, 71 or 72 I think, it was optional.

As far as the height difference, it is more of a "steering wheel clearance" problem. The CJ5 seat will only go back so far. Someone 6'3" may have a little trouble getting in and out of a CJ5.
