Anyone point me in the right direction for a few that wont break the bank, and house the standard OE-size gauges, even if gauges are aftermarket? Thanks in advance!

I think the Double D dash is going to be the closest to original that you'll find. The only thing is if you have him cut the holes for the clock and tach his measurements he has for those are wrong. There's a couple good threads here with their exact location. The only things that are different about the Double D dash is the glovebox hole won't have rolled edges and the dash won't have the reinforcement for heater control or along the bottom unless you request he adds them.

Definitely consider Double D fab. Look at my build for what he did for me. Some of the best dollars spent on the project were with Dan!
