CJ coughs, sputters and dies

My recently restored '81 CJ7 coughs and dies after about an hour of operation. I let it cool off for about 30 minutes and it fires up like nothing happened. It has the 258 inline 6. I retrofitted it with the Mopar MPI fuel injection system with the computer and electronic ignition and all the rest of the fancy, difficult to diagnose stuff. All the parts are new. I haven't tested the fuel pressure with a gauge but it appears to be getting plenty of gas. Has anybody with this system experienced a similar problem?

when you say it coughs sputters and dies.. is it dieseling out when you shut it down?? or just shutting down while driving??

It will begin to sputter while driving and eventually it will die. When I try to start it immedietly it will usually fire but it won't run. I've tried starting fluid but it doesn't help. I can watch the temp gauge (which is riding steady at 190) until the temp drops to 150 or so then it will start and run fine until it gets back to 190.
