Ghost peppers also known as Bhut Jolokia are rated in the Scoville Heat Unit ( SCU) as the third hottest peppers in the world. They are rated with 1,000,000 SCU. The ones hotter are US Grade Peeper Spray with 2,000,000-5,300,000 and the very hottest are Pure Capsaican with heated 15,000,000 SCU...

Am excited about using the other spices for more Asian fusion and other cooking s... Cannt wait...

Yep. I wanted to save the bigger ones to make more today.....so I bought fresh ones yesterday at a local farmers market. They all need up squished anyways, but were very yummi. The flavor was absolute wonderful.

The Scoville scale may be extrapolated to express the pungency of substances that are even hotter than pure capsaicin. One such substance is resiniferatoxin, an alkaloid present in the sap of some species of euphorbia plants (spurges). Since it is 1000 times as hot as capsaicin, it would have a Scoville scale rating of 16 billion.[29]

Yep 16 B seems a little hot... Usually the peppers have the heat in its membrane and within the seeds. Those taken out, the peppers are much milder and you can have some really nice flavor. I love to cook with Scotch Bonnet ( Habanero), seeds and membrane removed, then also with Pul Biber, Aleppo Peppers ( my personal fav, goes nice in Lahmacoon and other Mediterranean lamb dishes), and since yesterday this other pepper( not the ghost pepper) which I think I forgot to put on the picture. It tastes like a roasted Aleppo Pepper and I used it together with the Vulcano salt for my marinara sauce, that came out so nice with a pink moscato reduction, the marinara really highlighted the fried squid I made...




Cute little keeper. Awesome how tame he is!
