you mean diethyl, or a phenol group? usually you don't just remove a methyl, it is usually a compound or water. especially in distillaton.

My best friend's boss was from Ghana, and he made some killer 'shine out of yams, but it was so sweet you could get in way over your head.

You mean the methanol? If you distill at the correct temperature there should be no methanol in the shine, but there is always that risk.

More serious are the $6 billion costs of the "green wall" of trees being built to shield Beijing against sand and dust, and the $7 billion per year of losses created by pest species. We enter the zone of impressive numbers when we consider the onetime cost of the 1996 floods ($27 billion, but still cheaper than the 1998 floods), the annual direct losses due to desertification ($42 billion), and the annual losses due to water and air pollution ($54 billion). The combination of the latter two items alone costs China the equivalent of 14% of its GDP each year." - Jared Diamond, Collapse: How Societies Choose to Fail or Succeed

I was born and raised in "the moonshine capital of the world" aka Franklin County VA. I've seen my fair share of shine.
As far as taste, the white lightning or straight shine can have different tastes, depending on the ingredients used in the mash. Some people still prefer it straight, but a lot of people would add fruit (peaches, plums, cherry, strawberry, pineapple, etc) and let it sit for 6 months. After sitting for a long time, it will taste and feel smooth. It was a big hit at college parties with the ladies
You can still get FC's finest, but it is harder to find these days. After Operation LIghtning Strike in the late 90's. OLS was a federal raid on one of the largest operations ever uncovered that produced over 1.5 MILLION gallons of white lightning from 1992 to 1999. Since then, it's been slim pickin's.

From what I understand many moonshiners have switched to growing marijuana. About the same legal risk but higher returns and higher demand.
