check out the Zumo line from Garmin. They are waterproof and vibration resistant, cuz they're built for motorcycles. They are a little more expensive, tho.

I have a Garmin Nuvi 350, pretty happy with it so far. It has an off-road mode as well as the usual road maps.
Off-road mode is just straight line to the coordinates

The closest I could find to give you the best of both worlds would be Lowrance's XOG. It comes with on-road navigation, but you have to buy offroad maps in the way of eTopo files at 5 bucks each.
I opted for the more do-it-yourself route and got a UMPC, a RAM mount, GPS receiver, and Memory-Map Navigator software that uses cheaper topo maps ($1 each from one commercial site or free from the USGS site). I've just started looking around at on-road navigation, and trialed iGuidance software, which is pretty nice. Having a PC in the Jeep has the added bonus of playing MP3s and stuff so I don't have to fumble with changing CDs on a long trip. Edit: I should note that Memory-Map Navigator is just straight-line navigation, but overlays your tracks and waypoints on the topo map. You can even scan in your own maps and calibrate them with GPS coordinates... that's a lot of work though. I see that the OP is in Canada. Your government has great topo maps free for download too!

MAGELLAN CrossoverGPS. I like mine seems to do well and gets strong signal pretty much all the time.

I have a Garmin 76Csx. Loaded Road maps and Topo Maps. Has many Forest Service Roads listed, but I can easily get into a place where nothing is marked. No touch screen, but I think it is pretty close to the best of both worlds, especially since you can take it ANYWHERE...unplug and go hiking, mountain biking, boating, flying, anything.
