Chili cornbread

1 cup cornmeal
1 tsp. salt
1/2 tsp baking soda
4 eggs
1 can cream style corn
1 cup milk
2 TBSP vegetable oil
1 lb. ground beef, cooked and drained.
2 cup shredded cheddar cheese
1 (4oz) can of chopped green chiles
1 medium onion, chopped.

Sprinkle a table spoon of cornmeal in a greased 13 in. by 9 in. by 2 inch baking pan and set aside.

In a bowl mix the salt, baking soda and cornmeal. Mix in beaten eggs, corn, milk and oil. Stir just until moistened. Pour 1/2 the batter into the prepared baking pan. Layer with beef, cheese, chilies and onion. Top with remaining batter.

Bake at 350 degrees for 45 to 50 minutes or until golden brown.

Let stand 5 minutes before cutting.

Yield: 8 servings. Can eat warm or cold.

I got one..not too complicated..really simple if you're in a hurry, i used to eat it all the time as a kid.

Pretty much make a PB and J...but crush up lays plain potato chips and put it on the sandwich before you put the two pieces of bread together.

I'll throw a couple good ones in that are easy to make.....

Hanky Pankys

1 pkg. c0cktail rye bread (tried to sensor the name of the bread )
1 roll pork sausage
1 1/2 lb ground beef
2 small boxes medium Velveeta cheese
1/2 tsp. garlic salt
1/2 tsp. Italian seasoning
1 large pkg. shredded Mozzarella cheese

Brown meat and drain. Add Velveeta cheese to meat mixture. Add garlic salt and Italian seasoning. Put meat mixture on pieces of rye bread. Sprinkle with Mozzarella cheese and place on cookie sheet. Bake at 350 degrees until cheese melts. *These are really good with a little Tabasco sauce*

Pizza Fondue

1lb ground beef
1/2lb ground italian sausage
1/2 c. chopped onion
2 tbsp. butter or margarine
3 10oz. cans of pizza sauce
1 tbsp. cornstarch or 2 tbsp. flour
1 1/2 tsp. oregano
1 1/2 tsp. fennel seed
1/4 tsp. garlic powder
1 14oz. pkg. grated Cheddar cheese
1 14oz. pkg. grated Mozzarella cheese
1 loaf soft crust French or Italian bread

Brown onion, sausage, and beef in butter. Mix cornstarch, fennel seed, oregano, and garlic powder together and add to meat mixture. Add pizza sauce. Can add anything else that you like on a regular pizza. Can adjust sauce or cheese amounts to suit your taste. Cook slowly on stove top skillet, or preferably in an electric skillet, add cheese approximately 30 minutes before eating and cook until cheese is melted and mixture is slightly bubbling, stir often. Cut bread into pieces and dip in mixture, or spoon mixture on bread. Serves approximately 5-8 people

Boneless Chicken Breasts
Italian Dressing


Dump dressing (not all of it, however much you want for flavor) into fry pan, place chicken into pan, and pour more dressing on top of chicken. Fry until done, flipping chicken and adding more dressing for flavor as needed. (we usually go thru half a bottle of it for our meal) Enjoy!!!

If you let the dressing sit in the pan for a while after your done cooking, it kind of caramelizes, and can be used on top of the Chicken, or even cooking some garlic bread in it.

Fettucini & vegetables in Beef Broth

Sautee (sp?) a clove or more of chopped garlic and 1 small diced oniion in a pan. Add 2 tea spoons of Italian seasoning (in the spice section of the grocry store) when it's almost done.

Vegetables: Broccoli tops, bell peppers cut top to bottom like french fries, zuccini & squash circles, - any vegetable of that sort that you like will work.

Boil the vegetables in the beef broth. The more the better of the beef broth, I use like 6 cubes. Add the garlic mix at the end.

Top the pasta with the vegetables.

This is great for impressing women, especially if you use red & yellow peppers as well. It looks impressive and tastes but they never guess the beef broth.

I love the bread in this one, so I'll use a large baking dish and make a thin casserole with plenty of surface area for bread!

Okay so I gave the Casserole a shot....It is about to come out of the oven as I type this. I made a few changes:

I used a can of tomato soup and a can of tomato sauce as you instructed. I added about 3/4 can of tomato paste (one of the small cans) to thicken it up a bit. Add sauteed onions and cooked ground beef (1 lb). Put a layer down in the dish, added a layer of mainly mozzarella and just a little bit of sharp cheddar. More of the mixture, and then a layer of cheese again. I bought a loaf of freshly baked tuscan multigrain bread from the grocery's deli, buttered the bread, and heavily sprinkled garlic salt ontop of the butter. sliced it up in squares per your instructions and added on top of the cheese. covered with foil and baked for 45 minutes at 350. after baking it, I removed the foil, put it back in the oven on high broil for about 2-3 minutes, just enough to crisp up the bread layer a little bit without burning.

Just finished eating...great recipe, thanks! I'll be adding this to the keep pile

We have a family of 7 so you may need to increase or decrease ingredients accordingly.

Taco Chili

3 lb ground chuck
3 16 oz cans petite diced tomatoes
1 16 oz can tomato sauce
3 packages taco seasoning
40 oz can chili beans

Brown ground chuck, drain, put in 6 quart crockpot, drain and add tomatoes, drain and add beans, add all other ingredients and stir. To make this recipe without a crockpot, add 8 oz tomato sauce to recipe.
