canyons came stock on alot of wranglers so yea they will fit
im running 31x10.5 bfg a/t

here are some of mine




first one is with the lift. last two are before lift.

you can fit up to 10.5 wide tires with out having to use spacers. with spacers, you can run a 12.50 tire i think.

Yes you can but you will need a wheel spacer. I'm running a 1.25" spacer.
