I normally rev match and I don't use the clutch some times anyway. I always use the clutch for the 1-2 change and also the 2-1 down shift. So sometimes I have my foot out while I'm shifting.
Also I have a 2.5 with 33's and stock gears and motor. So what is this 5th gear you speak of?

Same here. I have a 4 speed with a granny 1st, so only use 2-4 on the road. Usually use the clutch for 2-3, but not for 3-4 or 4-3. And with my gearing, I'm in 4th by 35-40mph so I don't do much shifting other than stop lights/signs
