What to do with a beef loin?

I have a beef loin that i've been looking to cook but can't decide on how i want to cook it. Marinate and Grill, Smoke, Slow Cook in a crock pot... I just don't know. So I come to you the masses of JF to help guide me in this pursuit of cooking a mean *** beef loin.

if you know a good method or have a good recipe please don't hold back!

Loin is too good for the crock pot.
I'd flash it on the grill with a little Dales Seasoning and Mccormicks Steak Rub.
Pull it off the heat while it's still a little rare since it'll continue to cook after removing from the grill.
yumm good stuff!

Here's one idea.

Butterfly and stuffed with jalapeno creme cheese then rolled, wrapped with bacon and smoked. Bacon wrapped poppers and grilled pineapple on the side.

That was last friday. Some friends were competing in the BBQ cook off at the Brazoria County Fair in Angelton TX. This was the chefs choice entry.

They won 9th place brisket and 10th place fajitas, out of 150 teams.

Good times, but I still smell like smoke a week later.

i ended up marinating it and then grilling it till rare. i took the leftovers and sliced them up and tossed them in some gravy.

wish i saw jbolty's post before i cooked it, that looks fantastic!!
