BBQ competition

So I've signed up for a big green egg amateur bbq competition this weekend. We're one of 15 three-person teams and everyone will show up and be given a mystery meat and side (sides possibly?) and three hours to cook on a pre-lit egg.

This'll be our first competition and given the nature of the surprise food items it'll be interesting to prepare for. I'm thinking we'll bring a variety of dry rubs, maybe some sauces and an apple juice/cider spray for pork? Plus all the standard tools and what nots typically used for grilling.

So my question is, he's anyone participated in a competition like this before? Any tips or things I should absolutely have that'll help out?

Nope, they are setting up an egg for each team and lighting them for us before the competition.

Ok, added that in. The tricky thing is it looks like we should narrow down the scope of the flavor ranges we will have to not over complicate things during the cook and hopefully put together a cohesive plate.

More nervous about the sides than the actual meat...

I would probably bring some basil or some other kind of spices for different kinds of sides. Given that it is BBQ, maybe bring some brown sugar in the event it's beans?

Considering that they are only giving you three hours it's pretty unlikely they will give you a pork shoulder or brisket, those take way longer than that. I would guess it will be chicken, beef tenderloin, pork loin or maybe pork chops. I would bring stuff to make a quick brine. Maybe a meat grinder, powered or hand; whatever you get you can grind some of it and make sausage using corn husk as the casing then smoke it. Make sure you read the rules and understand the requirements for what to turn in. Bring all the basic spices plus a couple of things outside the norm like maybe fresh ginger, cinnamon, all spice, etc. Bring some bacon if you can.

I have never been in a contest myself but I worked in my friends booth at a Texas competition. They did well and most of the effort was spent controlling the temperature and making sure not to over cook. For the chefs choice portion they turned in a beef tenderloin stuffed with crčam cheese and jalapenos and wrapped in bacon.
