I always just kinda par boil the brats in beer and onions and then finish them off on the grill, that's never failed me yet.

I cook on gas, unless I am smoking, but if you have a three burner gas grill, you shut the middle one off and put the brats on the center and then the grease or whatever doesn't hit flame when it drips. You are basically grilling them with a convection method.

I haven't had the time to revisit this recipe.... Been working 47 days straight now, AND got in trouble with our district manager about grilling at work...

To avoid flame ups with charcoal ( I don't care what my hero hank hill says, propane is a pretender to the grill) ensure there is an area where there is no coal, about 25% of the coal space, that way you can move troublesome foods there to drip.

Well, thank you for the "American hero" compliment! Lol I'll take your advice, and if it wasn't 1000pm, and if I didn't have a fever of 102, I would be on my way to the butcher to stock up and try again. Oh, and if it was higher than 26 degrees out....

But, I do think that the foil/baking pan might be a must, so you don't loose much cheese...

Unless....

After cooking on the grill, you put it on a bun, and then dump on your favorite chili, and top said chili with more cheese....

Ok lets not get crazy here. The chili and cheese is best for light flavored items(freetoes, naked dogs, tortilla chips,fries,and or tots) it would be such a shame to drench your bacon cheese brat in chili.

I simply look at as a pass/fail experiment, I'm thinking chili may be a possible option that may lead to a flavor explosion. Or it could fail miserably.... Or my heart could stop in the first bite. But hey, I'm willing to try nearly anything cooked on charcoal...

If I drink enough, I may have a "brilliant idea" to use a strip steak as a bun for this goodness lol

I feel like the dos eqis guy sometimes... "I don't always cook food, but when I do...." lol I did sell one to a customer at advance. 5 bucks. I grilled them at work (don't tell my DM) and a customer wanted one. I was joking, said ok, 5 bucks, and he actually handed me the money!

You do know that one of the other parts stores have a Customer Appreciation day when they grill and GIVE food away.

I understand, we do that every now and then, but the bill for that doesn't come out of MY pocket on those days.... Nor will the store pay for all the bacon and brats for me to cook this on those days....
