As a resident of the area (Glens Falls) I can tell you there are very few public trails for OHV use, especially around Lake George.
If you can come up again when Mettowee is open again, that is a ton of fun.
Adirondack Jeeps might be helpful but I recall reading that they don't tend to post good off roading sites for fear of them being over exposed. It is also my under standing that many of the places they wheel are on private property and open only to club members.

If you stick around and check in the trail rides section there are a lot of pick up rides that go on, and there is always the Mettowee Off Road park in Granville. We do a 4x4 101 course at least once a month in association with Saratoga Chrysler Jeep Dodge Ram too.
