Yeah I can pretty much imagine, if he had of followed one of the two wheels (going left or right) he would have been fine

That situation would have been no better. I would never want to drive anywhere with a stock tierod that has been bent back unless it is sleeved. It is paper thin and looses what little strength it had once bent. It would get you off the trail, but he still had a 2 hour drive home. He really should have kept stock TREs with him, which I'm sure he'll probably do from now on. If he breaks one he can replace it and keep going.

But as a side note, I wonder why Jeep didn't go ahead and install a little bit beefier tie rod/drag link anyways?

It was a pretty open spot too. He could have easily avoided it.

They leave that stuff to the aftermarket. Upgraded parts isn't where their profit lies.

No, it made perfect sense, and I think my answer still pertains. They weren't designed with this in mind. They know people mod them out on the aftermarket, but they aren't going to build them that way. They are going to leave it all to the aftermarket. You don't need a strong tie rod to get to the mall, or down that gravel road.
