The only place I have ever had a issue with driving around without a door is in Myrtle Beach, SC. I just made a quick mirror to put in the door hinge for when I take it off. I bought a round mirror at a truck stop that I was able to attach a bolt to and slide it in the hinge where the door comes off. Its NCDOT approved so the law can not write you a ticket for it.

Yeah, just four bolts and disconnect the electrical cable from the door. Takes like 5 minutes for both the front doors.
