Utah to mexico

I want to go on my first trail ride. i'm gonna go with my brother and we want to start somewhere in Utah and end down by or in mexico. Just wondering if anybody knew of any trails that go down there. I'd be willing to do some street driving to get to trail heads. but i'd mostly like to ride trails all the way down there. any ideas are appreciated.
