Trails in Southwest/central Utah?

I'm driving from Vegas to Salt Lake City this summer and have about a week to kill in between. Are there any trails in between that would be worthwhile? Also wanted to get some rock climbing and fishing in if anybody has any ideas?

Anybody heard of Chokecherry Point Trail?

I haven't done Chokecherry yet.

However, I have done the Canaan Mountain Trail (near Zion National Park), and I also did a 300+ mile all offroad trail run when I did the North Rim of the Grand Canyon trail run. Both trails were amazing and I can't recommend them both highly enough!
