Good call.

I'll have to think about that. It's not a lot. This meat here will feed four for well over a month, may take two months? Of course we don't eat smoked meat everyday.

Here's a fresh picture. Just took the briskets out of the smoker and now they'll be wrapped in tin foil and finished in the turkey roaster for a 3 or 4more hours, or until it reaches 190 degrees internal temp.

Oh boy, this roast is out of this world. SunDevil was watching us post pics on FB and showed up to sample it. His exact words were its like the devil made it himself, it has to be a sin to taste this good.

It's juicy all the way though, nice smoke ring, and in every slice there's plugs of bacon and sausage that blow your mind.

We were eating it as fast as he was cutting it. Lol

Boy I tell ya, I've never had meat like that before. Changes your whole view on what a good brisket is.
