Help! Wheel and tire size??

So I have an 01 Grand Cherokee that im installing a 2" Budget Boost kit on this weekend. . I want pro comp
7069 wheels and general grabber tires. . What size wheel and tire setup would be ideal for mostly daily driving with weekend offroading and minimal towing. I dont want to trim if possible. Sorry Im new to this and theres so many wheel and tire sizes its making my head sping . . I keep seeing 265/70/16 but how much back spacing should i get 3.75" , 4" what are the advantages? Any help would be appreciated

I can tell you that if you don't want to trim, I'd keep the overall diameter to about 30". I have a 2" BB and 30.5s (265/60/18) and they rub a bit on the front. It's fine for light trail use and daily driving, but when I get replacements I'm going back down to 30".
