Brakes: Ceramic or organic pads, forged or composite rotors?

I need new front brake pads and rotors, so I bought Wagner ceramic pads and forged rotors. The alternatives were crappy O'Reilly Auto brand organic pads and composite rotors from a good brand that I can't remember. I've heard that ceramic pads don't grip the rotor as well, but ceramic doesn't fade as much, so I guess neither is clearly better than the other. But what about the rotors? Is forged or composite better? I can't find any info on the internet, but I assume composite is made of two different metals?

Does anyone know what a composite rotor is? I still haven't found any info on those.
