Prep work for painting

Ok so I'm using an da orbital sander with 120 grit. So how far Down should I sand? Also, I have a 96 xj and when I got to the part where the grill is connected, I started sanding and it cut right into the body... But it wasn't a shiny metal it was like white... Why is that? Is it like fiber glass?
