this is from my currect set up. a single 10" just so you see what it would kind of look like with the angle in the seat etc. usually for a closed suv style this way sounds best. some like rear firing but then it get a little more complicated and stuff. but if youre glassing there are several people around here who have made boxes that go along the rear panel and such.

You can definately "roll out" a new system in stages. If you know where you want to end up, make the purchases that make sense on the way there.

You can do the new head unit first since it will make even the worst speakers sound good and it will give you new options to keep you busy at the beginning. Then I would add the subs so you can get an idea of how much bass you're dealing with, then roll out a speaker set-up last (unless they're blown) so you can pick something with the right amount of power to work with the bass.
