I am having a hard time finding a place to ground my wire. Everything in there seems to be plastic except for that metal piece behind the coin box (ash tray, whatever). Anyone else have this problem or suggest anything?

there are only metal screws attached to the plastic.

Does the factory side harness have a ground wire, typically black? I tend to ground the headunit to the factory supplied ground through the adapter harness to ease any future removal. While not familiar with the WJ, the TJ radio is grounded not too far away on the body anyway. The factory unit had to have a ground somewhere, it is just a matter of finding it.
