Cherokee running hot! Need advice

So today was a warmer day and a few buddy's and I went riding, so I had to haul my trailer(600-900lb) and atv (300lb). Well I was on the express way and cranked my windows up and turned on the A/C and within a minute or two it was blowing cold. Now, I knew my temp gauge would climb some but instead it went a little above 210 and that started to worry me because I just replaced the water pump, water outlet housing/ thermostat housing and thermostat and on-top of that also gave it a good flush. Now after I shut it off for a little bit and start it back up it runs like complete crap and sputters and just doesn't want to run but when you drive it it seems to be fine. It only does this when it runs hot. Anyone have the same problem or have a solution? Do plan on doing a complete rebuild and possible re machine but would like to run for another year. Jeep does have 217,400 and still runs hard. Anything helps! Thanks!
