wheel width questions

Would switching from 7 inch wheels to 8 inch wheels with the same backspacing make a difference in track width with 10.5 inch wide tires?

No. The only thing that will change is the bolbousness of the side wall.

96 XJ 4.0 / 231 / 3.5" JY Lift/ 31" BFG /.....
93 VT1100 - Harley killer.
97 ZJ 4.0 / 242 / Stock
93 ZJ 4.0 / 2"BB / Wranglers / RIP-Gone but not forgotten.

If it aint dirty, it aint a JEEP, it's just a SUV.

Well, it will to an extent but not much. Assuming 2 wheels have the same backspacing, but ones a 7 and the other is an 8, the 8 will sit out an inch farther per side. Though this wont translate into much difference at the tire, as the inner bead will still be anchored to the exact same location as before.

Okay good. I figured it would make a marginal difference.

Bulbous. That is a great use of that word.

A change in backspacing with change the track, and you will want less backspacing if you run 31's. Stock wheels at 5.25" will have you rubbing the lower control arms at full lock.

I wouldn't spend the money to swap from 7"-->8" rims if the backspacing was the same though.

I'm moving to canyons from my stock steel wheels for a few reasons other than width. weight is a big one plus looks. I have hubcentric spacers so the actual back spacing is offset by 1.5". plus they were only 150 and that includes a full size spare that hasn't touch pavement that MATCHES my tires haha so its not what I"d call a real set back.
