Catskills Jeep Jamboree & Trails

Hello, I saw that there is a Jeep Jamboree in the Catskills this year, and I was wondering how that all works. Are those trails privately owned? I imagine they are.

Does anyone know of unmaintained roads that a newbie can explore around the catskills? Nothing serious, and nothing illegal, but something that isn't pavement.
