If you have a 12.5 wide tire, why be forced to choose between extremes of 8" wide and 10" wide rims? There are a few rim width choices in between 8" and 10".
A narrower rim holds a bead better at low pressures and the tire sidewall protects the rim more.
A wider rim gives a flatter footprint at a higher air pressure, which is good for highway driving for tire life, and I think for highway gas mileage too. A wider rim moves tire out, making fitment and clearance easier between tire and LCA and swaybar. A wider rim improves winter traction.
However, the wider rim doesn't hold a bead as well at low air pressures, and is more likley to get smacked by a rock or log offroad.
So how about a compromise rim width in the middle? Like a 9" wide rim for 11.5" and 12.5" wide tires, and a 9.5" wide rim for 12.5" wide tires.
Centerline makes several forged 15 X 9.5 and 16 X 9.5. I think a 9.5 wide rim would be dandy for a 12.5 wide tire, if the rim is rated to handle the tire height. Check rating for max tire size.
Moto Metal makes cast 16 X 9. It's good for a cast wheel. I like that size. I think it would be ideal for a 285/75R16 (33 X 11.5 R16) tire, IMO. Also good for a 33 X 12.5 R16 (whatever that metric size is called).
