What size speakers come in the stock 1998 jeep grand cherokee laredo v8 5.2L?

6.5" all the way around. With some modification of aftermarket brackets, you can fit a 6.75" if they're not too deep. Depth is going to be your enemy. If Crutchfield says they're not going to fit, they probably won't fit because of depth. Take their word for it.

The stock are technically 6.75, 6.5's fit. Good ones come with an adapter ring and bolt right up.

The problem with most aftermarket 6.75s is they're too deep and the Chrysler adapters generally work with 6.5" speakers, not 6.75" speakers. Chrysler speakers, even the Infinity ones, use a 3 screw mounting pattern. Aftermarket speakers mostly use a 4 screw mounting pattern. No aftermarket speaker bolts up directly without an adapter.

I have 6.5" aftermarkets and I got these from Crutchfield to make them fit properly:

the baffles aren't really necessary BUT they eliminate all rattle and keep the speakers dry and clean if you have those issues.

Mine too. I got creative and used a dremel to open them up to fit the 6.75s I have.
