Runs bad & wants to stall until it warms up

Making some progress with the jeep...after about 1 minute from start up she will run really bad and won't take gas almost stalling out. Then at about 125 on the temp meter or while warming up, it will clear up and runs great. I think it may be the heat sensor on the termostate cover. How do I replace it and how do I get the wire clip off the sensor? Thanks
