"Low Coolant" warning light

Having some random issues with this warning light. Sometimes on start up this light comes on, goes out when it fires and then comes back on after a second or 2. If you turn the car off and then start it again it often clears it.

I have checked the levels and they are all fine and can't see that this light is used as a warning for anything else

Any suggestions?

The sensor in the overflow tank may be going bad.
