Air Conditioner always on when starting

Hi folks, hopefully this is a simple question I have. On my 98 ZJ Limited, the a/c is on when I first start it up, or after it has been sitting for a few hours. If I turn it off for only an hour or so, it 'remembers' and stays off. But as it gets cooler, this is becoming a problem. When it's 60 degrees outside, maybe I just don't want the a/c coming on. Is there a setting or something that I need to do to make it stay off all the time? I'm talking about the a/c itself, btw, not the blower.

do you have it set to defrost? you know A/C runs when you hit defrost right?

I think it only goes to defrost if I set the knob all the way to the right. Although I could be wrong. But if it was on defrost, then I shouldn't be able to turn it off, right?
