I have a '91 with the 2.5L, the temp runs 200-210 F.
Would I gain anything by putting a 180 thermostat
in it except maybe running 20 cooler,
would this change the performance any ?

no i run the same temp with a 91 4.0 it would be good just to do but i dont think any perfomance you will notice sorry. how much to do the job

The times I have put the cooler t-stat in any of my vehicals, i have noticed more of a variation in temp.

Right now, your rig probably stays a 210* just about all the time right? Put the 180* in there and it will range from 170*-200*.
You will notice that it wont go to 180* and stay there.

Stick with what you got!!

Your right it runs up to about 200-210 and stays there.
Forgot to mention I am running a flex-a-lite
electric fan behind the radiator, it makes it
drop to about 200 when it runs. Thanks.

Pre warm up listens to the Coolant temp sensor and the
TPS and the MAP sensor

So it does have some sort of function being cold
but too cold will wear out the cylinder walls....
just my .02
