Okay, I'll give it a try. I'll post my findings in a few.

Alright so I've got cold numbers. Had to choose different settings. I was getting 1 on the 20k cold. So I switched it to 200k and I get 34.0 on the coolant temp and air temp. Jeep is warming up now. Does that make sense?

Hot numbers are way off from what they should be I think.
Coolant temp sensor at 2000 was 1011.
Air temp wouldn't register at 2000 had to switch to 20k, got 2.443.

Any suggestions.

The coolant temp sensor indicates you have a 185 tstat. It looks good. Tyne air temp sensor it's off. 2.4k is 140 which is high. It needs to be replaced.

Thank you, I'll replace that ASAP. I think I might have one at the farm too.
I'll post what I find. Should I be resetting the comp after swapping that sensor?

Thanks.
I'll stop by the farm after work tomorrow and grab that and see if it helps at all. I cleaned the throttle body more as well.
I didn't take it off because I don't have a new gasket at the moment. So I'll grab one tomorrow as well. Then I'll get right in there.
But the bit I was able to clean, did nothing.
Thanks again for all the help and having patience with me in this process. I really do appreciate it.

New MAT sensor didn't help.

As I was holding the gas so the engine was at 1000RPMs when the T stat opened I could see the rpms drop to about 700-800 then I let go of the gas and it dropped to the lowest line.

I'm at a loss. Why would the engine slow down when a rush of coolant enters it?? Seems weird to me.
Thanks again.

So a new observation I made today.
Seems as though my thermostat opens and closes quite often during my drive home.
What I've noticed is my Tstat will open. Then my gauge drops to the line between 40 and 100. Picture to follow. Then the engine will drop in rpms. Then I'll start driving again. Now at this point my Tstat has closed again. So my temp will get to 100 then drop down again. And my rpms drop as well. Same spot as the first time.
Is it possible that my thermostat is bad and is confusing the computer that believes it is in open loop??? Causing it to drop the rpms? The picture doesn't show where it dropped to as I was too late to take a photo. But it shows where the middle line is between 40 and 100.

You are definitely low! You definitely need to look at the tstat.

Alright, I picked up a new Tstat. 195* this time. I'll swap that and post my findings.
I hope this works.
Someone suggested that my brake booster could be shot.
But I don't see how that could affect things. My brakes work fine and pressing the pedal doesn't affect the rpms.

If it was you could pinch off the hose and it would run normal.

Nope, brake booster is fine. As I thought any how.
Voltage from the battery when on is 14.8-9. So that's fine I do believe. No vac leaks anywhere, plus my problem is going the opposite of a vac leak from my readings. I've got a new thermostat and I'll be installing it tonight. I just need to find the thread about drilling a hole in the Tstat.
They don't have those ones available here from napa anyhow.
So still does it right on cue.
I still need to test the o2 sensor. But I don't know if the problems are consistent with that of a bad o2 sensor. I've had a bad o2 and didn't experience this, that was on a ZJ though.
Also pulling throttle body tonight as well. Go new gaskets and going at it with a tooth brush. This is really becoming a pita.

The iac controls idle. I know you replaced it. I hope cleaning the t b makes a difference. I would have told you to replace and clean the iac.
