Getting to the heater core
Do I need to disconnect the hoses from the engine side that connect to the heater core to take the plastic cover off from the interior thats covering the heater core? Or could I somehow remove that plastic cover without disconnecting the hoses so I don't have to drain my antifreeze?

You have to disconnect the hoses....just clamp them off or plug them with bolts once you remove em' to keep the mess to a minimum.

Are you trying to remove your heater core?
If so, you are going to need to remove the heater box from under the dash. If you have the under dash mounted A/C, unscrew the four bolts that hold it to the dash and lift it up slightly, pull straight back then down. Remove your battery. The heater box is bolted through the firewall in four places and the first nut is under the battery. Two more nuts between that one and the engine and the fourth is directly behind the engine. Remove the upper and lower heater hoses at the firewall. Go back inside the vehicle and wiggle the heater box out, which is easier if you do not have A/C. You also have to release the cables from the switches to the heater box and the accordian duct from the heater box to the outside air intake.
