How many RPMs at 60mph...
 
How many RPMs should I be turning at 60mph with stock tires, aw4, 3.55 rear end? Right now im at 2100 and that seems high to me.

Jeep sat in the driveway for about a week and the battery died. After I charged the battery it started ok, but almost stalled a few times at stop signs. Once it warmed up it was fine. Its not throwing any codes and has a new TPS and IAC. Maybe im just paranoid...

Sounds perfectly normal to me. That's not high at all. I run about 2500 at 65 with my current tire/gear combo. You're fine

Its a jeep, not a race car :) jeeps arent meant to go 100+ mph, or even over 75 for that matter! It sounds fine to me too

This page will let you calculate your RPMs, or you can refer to the chart...
http://www.superlift.com/library/gears.asp

Using their formula, you should be at or around 2500 RPM in THIRD, not OD, and with the torque converter unlocked...
