Engine Trouble - Rough engine, temp question

Hi,

I've got a 2000 XJ, new to me, 1st time Jeep owner. I recently bought this Jeep and I've noticed that it runs really rough at about 2K rpms. Sound and feels like I'm chewing gravel in the engine. It really only happens right when I hit just under 2K rpms and the engine seems to bog down a bit, makes a deeper sound runs rough. Having never owned an XJ previously, I'm not sure what to expect. Any thughts? I think it seems to suck gas more than I think it should and it also seems a bit under powered when I'm just cruising. It moves when I punch it but somehow I think it should be able to deliver more gitty up.

Second question, what is the normal operating temp for my Jeep. It get's upto and stays above 210 in about 1 minute. When I run the A/C the fan goes on but it usually stays above 210.
